- 300g salmon fillets (2 x 150g)
- 400g sweet potato, cut into 2–3 cm cubes
- 300g broccoli, cut into florets
- 30ml olive oil, divided
- 2 cloves garlic, minced
- 1 lemon, half sliced and half for juice
- Salt and freshly ground black pepper to taste
- 1 tablespoon fresh dill or parsley, chopped (optional)

- 1.Preheat your oven to 200°C. Line a large baking sheet with parchment paper.
- 2.In a bowl, toss the cubed sweet potato with half of the olive oil, salt, and pepper. Spread them in a single layer on the prepared baking sheet and roast for 15 minutes.
- 3.While the potatoes roast, toss the broccoli florets with the remaining olive oil and minced garlic in the same bowl. After 15 minutes, add the broccoli to the baking sheet and roast for another 10 minutes.
- 4.Pat the salmon fillets dry and season them with salt, pepper, and a squeeze of fresh lemon juice. Push the vegetables to the sides to make space in the center of the pan.
- 5.Place the salmon fillets on the sheet, skin-side down, and top each with a few lemon slices. Return the pan to the oven and roast for a final 10-12 minutes, or until the salmon is cooked through and flakes easily.
- 6.Remove from the oven, garnish with fresh dill or parsley if desired, and serve immediately.
