Ingredients
- 300g sweet potato
- 50g dry red lentils
- 50g fresh spinach
- 1 teaspoon olive oil
- 300ml water
Instructions
- Peel and chop the sweet potato into small cubes. Rinse the red lentils thoroughly under cold water.
- Cook the base: Place the sweet potato, rinsed lentils, and water into a small saucepan. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes until the potato is fork-tender and the lentils are soft.
- Add the greens: Stir in the fresh spinach and olive oil during the final 2 minutes of cooking until the spinach wilts.
- Blend until smooth: Transfer the mixture carefully to a high-speed blender. Blend until completely smooth, adding a splash of extra water, breast milk, or formula to reach your desired consistency.
- Cool and store: Let the purée cool to a safe temperature before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze in ice cube trays for longer storage.
