Ingredients
- 300g ground lamb
- 400g sweet potato, diced
- 150g fresh spinach
- 1 red bell pepper, diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 15ml olive oil
- 5g ground cumin
- 5g ground coriander
- 5g smoked paprika
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the chopped onion and cook for 3–4 minutes until softened.
- Add the minced garlic and diced red bell pepper, cooking for another 2 minutes until fragrant.
- Add the ground lamb to the skillet. Break it up with a spoon and cook for 5–6 minutes until browned. Drain any excess fat.
- Stir in the cumin, coriander, and smoked paprika, and season with salt and pepper. Cook for 1 minute to toast the spices.
- Add the diced sweet potato and 60ml of water to the skillet. Cover and cook for 10–12 minutes, or until the sweet potato is tender.
- Stir in the fresh spinach and cook for 1–2 minutes until it has just wilted.
- Remove from heat, squeeze the lemon juice over the top, and serve immediately.
