Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook for 5-7 minutes until softened and translucent.
- Add the minced garlic, ground cumin, ground coriander, and turmeric. Sauté for 1 minute until the spices are fragrant.
- Stir in the cubed sweet potato, rinsed red lentils, and the can of chopped tomatoes with its juice.
- Pour in the vegetable broth, season with salt and pepper, and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes, stirring occasionally, until the lentils and sweet potatoes are tender.
- Stir in the fresh spinach and cook for another 2-3 minutes until it has fully wilted into the stew.
- Remove the pot from the heat and stir in the fresh lemon juice. Taste and adjust seasoning if necessary before serving.
