Ingredients
- 200g lean lamb mince
- 250g sweet potato
- 100g frozen peas
- 1 small garlic clove, minced
- 25g onion, finely chopped
- 1 tablespoon fresh mint, chopped
- 1 tablespoon olive oil
Instructions
- Peel and chop the sweet potato into small cubes. Steam or boil for 10-15 minutes until very tender, then drain and mash thoroughly in a large bowl.
- While the potato cooks, place the frozen peas in a separate bowl and cover with boiling water for 2-3 minutes to defrost. Drain well.
- To the bowl with mashed sweet potato, add the lamb mince, drained peas, minced garlic, chopped onion, and fresh mint. Mix with your hands until everything is well incorporated.
- Shape the mixture into 10-12 small, toddler-fist-sized patties. Don't worry about making them perfect!
- Heat the olive oil in a non-stick frying pan over medium heat. Gently place the patties in the pan and cook for 4-5 minutes per side, until golden brown and cooked through. The internal temperature should be safe for lamb.
- Transfer the patties to a paper towel-lined plate to cool slightly. Serve whole as finger food or mash with a fork for younger babies.
