Ingredients
- 300g ground lamb
- 1 large zucchini (about 250g)
- 2 medium carrots (about 200g)
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 15g fresh mint, chopped
- 15g fresh parsley, chopped
- 1 teaspoon ground turmeric
- 1 tablespoon fresh ginger, grated
- 60ml extra virgin olive oil
- 30ml lemon juice
- Sea salt to taste
Instructions
- In a medium bowl, combine the ground lamb, chopped red onion, half of the minced garlic, chopped mint, and chopped parsley. Season with sea salt. Mix gently with your hands and form into 4 small patties.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the lamb patties for 4–5 minutes on each side, or until browned and cooked through. Set aside and keep warm.
- While the patties are cooking, use a spiralizer or a julienne peeler to create “noodles” from the zucchini and carrots. Place the vegetable noodles in a large serving bowl.
- Prepare the dressing by whisking together the remaining 45ml of olive oil, lemon juice, grated ginger, the remaining minced garlic, and the ground turmeric in a small bowl until well combined. Season with a pinch of sea salt.
- Pour the dressing over the zucchini and carrot noodles and toss gently to ensure everything is evenly coated.
- To serve, divide the noodle salad between two plates and top with the warm herbed lamb patties.
