Ingredients
- 300g ground lamb
- 150g sweet potato, peeled
- 1/2 red onion, finely chopped
- 2 cloves garlic, minced
- 15g fresh mint, chopped
- 15g fresh parsley, chopped
- 1/2 large cucumber, finely diced
- 30ml extra virgin olive oil
- 15ml lemon juice (from 1/2 lemon)
- Sea salt to taste
- Black pepper to taste
Instructions
- 1.Grate the sweet potato using a box grater. Place it in a clean tea towel or cheesecloth and squeeze out as much moisture as possible. This is key for firm patties.
- 2.In a large bowl, combine the ground lamb, grated sweet potato, half of the chopped red onion, minced garlic, half of the mint, and half of the parsley. Season generously with salt and pepper. Mix well with your hands until just combined.
- 3.Form the mixture into 4-6 equal-sized patties, about 2cm thick.
- 4.Heat 15ml of olive oil in a large skillet over medium-high heat. Carefully place the patties in the pan and cook for 5-6 minutes per side, until deeply golden brown and cooked through.
- 5.While the patties cook, prepare the relish. In a small bowl, combine the diced cucumber, the remaining red onion, mint, and parsley. Drizzle with the lemon juice and the remaining 15ml of olive oil. Season with a pinch of salt and toss to combine.
- 6.Serve the hot lamb and sweet potato patties immediately, topped with the fresh and zesty cucumber relish.
