Spiced Lamb Koftas with Cauliflower Tabbouleh

Ingredients
- 400g lean lamb mince
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp cinnamon
- 1 medium head of cauliflower
- 1 cucumber, diced
- 2 ripe tomatoes, diced
- 1/2 red onion, finely diced
- 50g fresh parsley, chopped
- 25g fresh mint, chopped
- 60ml extra virgin olive oil
- Juice of 1 lemon
- Salt and black pepper to taste
Instructions
- 1.In a large bowl, combine the lamb mince, finely chopped onion, minced garlic, cumin, coriander, cinnamon, salt, and pepper. Mix thoroughly with your hands.
- 2.Divide the lamb mixture into 8 equal portions and shape each into a sausage or kofta shape.
- 3.Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the koftas for 8-10 minutes, turning occasionally, until browned on all sides and cooked through.
- 4.While the koftas are cooking, prepare the tabbouleh. Grate the cauliflower or pulse it in a food processor until it has a rice-like consistency. Transfer to a large serving bowl.
- 5.Add the diced cucumber, tomatoes, red onion, chopped parsley, and mint to the bowl with the cauliflower rice.
- 6.In a small bowl, whisk together the remaining olive oil and lemon juice to create the dressing. Pour it over the tabbouleh.
- 7.Season the tabbouleh with salt and pepper, and toss gently to combine all ingredients well.
- 8.Serve the warm lamb koftas immediately with the fresh cauliflower tabbouleh on the side.
