Ingredients
- 500g cauliflower, cut into florets
- 150g brown or green lentils, dry
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 45g tahini
- 60g plain yogurt
- 1 lemon
- 30ml olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- Fresh parsley for garnish
- Salt and black pepper to taste
Instructions
- 1.Preheat your oven to 200°C. Toss the cauliflower florets with 15ml of olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and golden brown at the edges.
- 2.While the cauliflower roasts, heat the remaining 15ml of olive oil in a saucepan over medium heat. Sauté the chopped onion and garlic for about 5 minutes until soft. Stir in the cumin, coriander, and turmeric, and cook for 1 minute until fragrant.
- 3.Rinse the lentils and add them to the saucepan along with 450ml of water. Bring to a boil, then reduce the heat, cover, and let it simmer for 20-25 minutes until the lentils are tender and the liquid is absorbed. Season to taste with salt and pepper.
- 4.To make the dressing, whisk together the tahini, yogurt, and the juice of half a lemon in a small bowl. Add 2-3 tablespoons of water, one at a time, until you reach a smooth, drizzlable consistency. Season with a pinch of salt.
- 5.Assemble the bowls by dividing the cooked spiced lentils, then topping with the roasted cauliflower. Drizzle generously with the lemon-tahini dressing and garnish with fresh parsley before serving.
