Ingredients
- 300g lean turkey mince
- 150g cooked brown or green lentils, drained
- 1 medium zucchini (approx. 200g)
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 15g fresh parsley, chopped
- 10g fresh mint, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 150g plain Greek yogurt
- 1/2 lemon (for juice and zest)
Instructions
- 1.Grate the zucchini, place it in a clean kitchen towel or cheesecloth, and squeeze out as much excess water as possible. This is crucial for firm patties.
- 2.In a large bowl, combine the turkey mince, drained lentils, grated zucchini, finely chopped red onion, minced garlic, chopped parsley, 5g of the chopped mint, cumin, and coriander. Season with salt and pepper.
- 3.Mix with your hands until just combined, being careful not to overwork the mixture. Shape into 6-8 small patties, about 2 cm thick.
- 4.Heat the olive oil in a large non-stick skillet over medium-high heat. Cook the patties for 4-5 minutes on each side, until golden brown and cooked through.
- 5.While the patties cook, prepare the dip. In a small bowl, mix the Greek yogurt, juice and zest from half a lemon, and the remaining 5g of chopped mint. Season with a pinch of salt.
- 6.Serve the hot turkey and lentil patties immediately with the zesty yogurt dip and a side salad or steamed vegetables.
