Ingredients
- 300g lean ground turkey
- 1 medium zucchini (approx. 200g), diced
- 1 red bell pepper (approx. 150g), diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 400g canned chopped tomatoes
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 15g fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- 1.In a bowl, combine the ground turkey, half the minced garlic, half the chopped parsley, salt, and pepper. Mix well and form into 8-10 small meatballs.
- 2.Heat the olive oil in a large non-stick skillet over medium-high heat. Add the meatballs and brown them on all sides for about 5-7 minutes. Remove from the skillet and set aside.
- 3.In the same skillet, add the chopped onion and sauté for 3 minutes until softened. Add the remaining garlic, diced zucchini, and red bell pepper. Cook for another 5 minutes, stirring occasionally.
- 4.Pour in the canned chopped tomatoes, add the dried oregano, and season with salt and pepper. Stir everything together and bring to a gentle simmer.
- 5.Return the browned meatballs to the skillet, nestling them into the vegetable sauce. Reduce the heat to low, cover, and let it simmer for 10-12 minutes until the meatballs are cooked through.
- 6.Stir in the remaining fresh parsley just before serving. Serve hot, directly from the skillet.
