Ingredients
- 250g ground lamb
- 120g quinoa
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 1/2 red onion, sliced
- 2 cloves garlic, minced
- 30ml olive oil
- 250ml water or vegetable broth
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp smoked paprika
- Pinch of ground cinnamon
- Juice of 1/2 lemon
- Small bunch of fresh parsley, chopped
- Salt and freshly ground black pepper to taste
Instructions
- 1.Preheat your oven to 200°C. On a baking sheet, toss the chopped bell pepper, zucchini, and red onion with half the olive oil, salt, and pepper. Roast for 20-25 minutes until tender and slightly caramelized.
- 2.While the vegetables are roasting, rinse the quinoa thoroughly. In a small pot, bring the water or broth to a boil, add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the liquid is absorbed.
- 3.Let the quinoa stand, covered, for 5 minutes off the heat, then fluff with a fork.
- 4.While the quinoa cooks, heat the remaining olive oil in a skillet over medium-high heat. Add the minced garlic and cook for 30 seconds until fragrant. Add the ground lamb and cook, breaking it up with a spoon, until browned.
- 5.Drain any excess fat from the lamb. Stir in the cumin, coriander, smoked paprika, cinnamon, salt, and pepper. Cook for another minute to toast the spices.
- 6.Assemble the bowls by dividing the fluffed quinoa, then topping with the roasted vegetables and the spiced lamb. Garnish with fresh parsley and a squeeze of lemon juice before serving.
