- 150g parsnip, chopped
- 1 red onion, cut into wedges

- 45 ml extra virgin olive oil
- 1/2 lemon, for juice

Instructions
- 1.Preheat your oven to 200°C (400°F).
- 2.On a large baking tray, combine the cubed sweet potato, carrots, parsnip, and red onion. Drizzle with 30 ml (2 tablespoons) of olive oil, season with salt and pepper, and toss to coat. Roast for 20 minutes.
- 3.While the vegetables are roasting, prepare the herb crust. Finely chop the leaves from the rosemary and thyme sprigs and combine them in a small bowl with the minced garlic and the remaining 15 ml (1 tablespoon) of olive oil.
- 4.Pat the lamb chops dry with a paper towel and season both sides generously with salt and pepper. Rub the herb and garlic mixture evenly over the lamb chops.
