Ingredients
- 300g ground lamb
- 400g sweet potatoes, peeled and diced into 1-2 cm cubes
- 1 red bell pepper, diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 100g fresh spinach
- 50g Kalamata olives, halved
- 1 tbsp fresh rosemary, chopped
- 30ml olive oil
- 15ml lemon juice
- Salt and black pepper to taste
Instructions
- 1.Heat 15ml of olive oil in a large skillet over medium-high heat. Add the diced sweet potatoes and cook for 10-12 minutes, stirring occasionally, until tender and lightly browned. Remove from the pan and set aside.
- 2.Add the remaining 15ml of olive oil to the same pan. Sauté the chopped onion for 3-4 minutes until softened. Add the ground lamb and cook, breaking it up with a spoon, until browned, about 5-7 minutes.
- 3.Stir in the minced garlic, chopped rosemary, and diced bell pepper. Cook for another 3-4 minutes until the pepper is tender-crisp.
- 4.Drain any excess fat from the pan. Return the cooked sweet potatoes to the pan along with the halved Kalamata olives. Stir to combine.
- 5.Add the fresh spinach and cook for 1-2 minutes until it has just wilted. Remove from the heat.
- 6.Squeeze the lemon juice over the hash, season with salt and pepper to taste, and stir one last time. Serve immediately.
