Ingredients
- 120g millet
- 1 courgette (approx. 200g)
- 1 red bell pepper (approx. 150g)
- 200g cherry tomatoes
- 1 red onion
- 240g canned chickpeas, rinsed and drained
- 60g feta cheese, crumbled
- 45ml olive oil, divided
- 1 lemon, juice and zest
- 1 tsp dried oregano
- 1 clove garlic, minced
- Fresh parsley, chopped (for garnish)
- Salt and freshly ground black pepper to taste
Instructions
- 1.Preheat your oven to 200°C. Chop the courgette, red bell pepper, and red onion into 2cm pieces. On a baking tray, toss these vegetables and the cherry tomatoes with 30ml of olive oil, dried oregano, salt, and pepper. Roast for 20-25 minutes, until tender and slightly caramelized.
- 2.While the vegetables are roasting, cook the millet. Rinse the millet well. In a small saucepan, combine the millet with 480ml of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes, or until the water is absorbed.
- 3.Prepare the dressing. In a small bowl, whisk together the remaining 15ml of olive oil, the juice and zest of one lemon, the minced garlic, and a pinch of salt and pepper.
- 4.Once the millet is cooked, fluff it with a fork. Add the roasted vegetables and the rinsed chickpeas to the pan with the millet. Pour the dressing over everything and gently toss to combine.
- 5.Divide the millet bowl between two plates. Top with crumbled feta cheese and a sprinkle of fresh parsley before serving.
