Ingredients
- 4 lamb loin chops (approx. 400g total)
- 1 medium head cauliflower (approx. 500g), cut into florets
- 1 bunch asparagus (approx. 250g), trimmed
- 30ml extra virgin olive oil, divided
- 2 cloves garlic, minced
- 15g fresh mint leaves, chopped
- 15ml lemon juice
- Salt and freshly ground black pepper to taste
Instructions
- 1.Preheat your oven to 200°C. Steam or boil the cauliflower florets for 10-12 minutes until very tender. Drain thoroughly.
- 2.While the cauliflower cooks, toss the asparagus with 15ml of olive oil, salt, and pepper on a baking sheet. Roast for 10-15 minutes, until tender-crisp.
- 3.In a food processor, combine the drained cauliflower, chopped mint, lemon juice, half of the minced garlic, and a pinch of salt and pepper. Blend until smooth and creamy.
- 4.Pat the lamb chops dry and season generously with salt, pepper, and the remaining minced garlic.
- 5.Heat the remaining 15ml of olive oil in a large skillet over medium-high heat. Sear the lamb chops for 3-4 minutes per side for medium-rare, or until cooked to your preference.
