Ingredients
- 500g sweet potatoes, peeled and cubed
- 250g brown or green lentils, rinsed
- 200g kale, stems removed and roughly chopped
- 1 large onion, diced
- 3 cloves garlic, minced
- 1000ml vegetable broth
- 30ml olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- Juice of 1/2 lemon
- Salt and freshly ground black pepper to taste
Instructions
- 1.Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook for 5-7 minutes until soft. Add the minced garlic, cumin, coriander, and turmeric, and cook for one more minute until fragrant.
- 2.Add the rinsed lentils, cubed sweet potatoes, and vegetable broth to the pot. Season with salt and pepper. Bring to a boil.
- 3.Reduce the heat to low, cover the pot, and let it simmer for 25-30 minutes, or until the lentils are tender and the sweet potatoes are soft.
- 4.Stir in the chopped kale and cook for another 3-5 minutes until it has wilted.
- 5.Remove from heat and stir in the fresh lemon juice. Adjust seasoning if needed and serve warm.
