Ingredients
- 250g lean ground lamb
- 100g green or brown lentils, rinsed
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 400g canned diced tomatoes
- 150g fresh spinach
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 400ml vegetable stock
- 150g plain yogurt
- 1 tbsp fresh mint, chopped
- 1 tsp lemon juice
- Salt and black pepper to taste
Instructions
- 1.Heat olive oil in a large skillet over medium-high heat. Add the chopped onion and cook for 3-4 minutes until softened. Add the garlic, cumin, and coriander, cooking for another minute until fragrant.
- 2.Add the ground lamb to the skillet, breaking it up with a spoon. Cook for 5-6 minutes until browned. Drain any excess fat if desired.
- 3.Stir in the rinsed lentils, diced tomatoes with their juice, and vegetable stock. Season with salt and pepper. Bring the mixture to a simmer.
- 4.Reduce heat to low, cover, and cook for 20 minutes, or until the lentils are tender and have absorbed most of the liquid.
- 5.While the skillet simmers, combine the plain yogurt, chopped mint, and lemon juice in a small bowl. Season with a pinch of salt to create the sauce.
- 6.Once the lentils are cooked, stir the fresh spinach into the skillet in handfuls. Cook for 1-2 minutes until it has wilted completely.
- 7.Serve the lamb and lentil mixture immediately, topped with a dollop of the fresh mint yogurt.
