Ingredients
- 300g lean lamb mince
- 400g butternut squash, peeled and diced
- 100g kale, tough stems removed and chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 30ml olive oil
- 5g ground cumin
- 5g ground coriander
- 3g smoked paprika
- 15ml fresh lemon juice
- 15g fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- 1.Heat 15ml of olive oil in a large skillet over medium-high heat. Add the diced butternut squash and cook for 8-10 minutes, stirring occasionally, until it starts to soften and brown. Remove from the skillet and set aside.
- 2.In the same skillet, add the remaining 15ml of olive oil. Add the chopped onion and cook for 4-5 minutes until softened. Add the minced garlic, cumin, coriander, and paprika, and cook for another minute until fragrant.
- 3.Add the lamb mince to the skillet. Break it up with a spoon and cook for 6-8 minutes until browned all over. Drain any excess fat if necessary.
- 4.Return the cooked butternut squash to the skillet with the lamb. Add the chopped kale and stir everything together. Cook for another 3-5 minutes, until the kale has just wilted.
- 5.Remove from the heat. Stir in the fresh lemon juice and season generously with salt and pepper to taste.
- 6.Divide the skillet meal between two plates and garnish with fresh parsley before serving.
