Ingredients
- 300g lamb mince
- 250g sweet potato
- 200g cauliflower
- 1 small onion
- 2 cloves garlic
- 1 sprig fresh rosemary
- 5g ground cumin
- 5g ground coriander
- 30ml olive oil
- Salt and black pepper to taste
Instructions
- 1.Peel and chop the sweet potato. Cut the cauliflower into florets. Place both in a pot, cover with water, bring to a boil, and cook for 15-20 minutes until very tender.
- 2.While the vegetables cook, finely chop the onion and garlic. In a bowl, combine the lamb mince, half of the onion, half of the garlic, cumin, coriander, salt, and pepper. Mix well and form into 4 patties.
- 3.Heat 15ml of olive oil in a pan over medium-high heat. Cook the lamb patties for 4-5 minutes per side, or until cooked through and nicely browned.
- 4.Drain the cooked sweet potato and cauliflower. Return them to the pot. Add the remaining 15ml olive oil, finely chopped rosemary, the rest of the onion and garlic, and mash until smooth. Season with salt and pepper.
- 5.Serve the spiced lamb patties immediately with the warm cauliflower-sweet potato mash.
