Ingredients
- 2 lamb loin chops (approx. 240g total)
- 150g dry green or brown lentils
- 1 medium fennel bulb, thinly sliced
- 200g cherry tomatoes, halved
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 30ml extra virgin olive oil
- 1 sprig fresh rosemary, leaves chopped
- Juice of 1/2 lemon
- 500ml vegetable broth or water
- Salt and freshly ground black pepper to taste
Instructions
- 1.Rinse the lentils. In a saucepan, combine the lentils and vegetable broth (or water). Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes until tender but not mushy. Drain any excess liquid.
- 2.While the lentils cook, preheat your oven to 200°C. On a baking sheet, toss the sliced fennel and cherry tomatoes with 15ml of olive oil, salt, and pepper. Roast for 15-20 minutes until the fennel is tender and the tomatoes are blistered.
- 3.Pat the lamb chops dry with a paper towel. Season both sides generously with salt, pepper, minced garlic, and the chopped rosemary.
- 4.Heat the remaining 15ml of olive oil in a skillet over medium-high heat. Carefully place the lamb chops in the pan and sear for 3-4 minutes per side for a medium-rare finish. Let them rest on a cutting board for 5 minutes before serving.
- 5.In a large bowl, combine the cooked lentils, roasted fennel, tomatoes, and the finely chopped raw onion. Drizzle with lemon juice and toss gently to mix.
- 6.Divide the warm lentil salad between two plates. Top each with a rested lamb chop and serve immediately.
