Ingredients
- 500g lean lamb mince
- 400g canned green lentils, drained and rinsed
- 1 large courgette, diced
- 1 red bell pepper, diced
- 250g cherry tomatoes
- 1 large onion, chopped
- 3 cloves garlic, minced
- 30ml olive oil
- 2 teaspoons dried oregano
- 1 teaspoon smoked paprika
- 250ml low-sodium vegetable stock
- Juice of 1/2 lemon
- Handful of fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- 1.Preheat your oven to 200°C (180°C fan). While it heats, prepare your vegetables: chop the onion, mince the garlic, and dice the courgette and red bell pepper.
- 2.Heat the olive oil in a large, oven-safe skillet over medium-high heat. Add the chopped onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- 3.Add the lean lamb mince to the skillet. Break it up with a spoon and cook for 5-7 minutes until browned all over. Drain any excess fat.
- 4.Stir in the dried oregano, smoked paprika, salt, and pepper. Cook for one minute to toast the spices.
- 5.Add the diced courgette, bell pepper, drained lentils, and pour in the vegetable stock. Bring to a simmer and let it cook for 2-3 minutes.
- 6.Scatter the cherry tomatoes over the top. If your skillet isn't oven-safe, transfer the mixture to a 2-litre baking dish.
- 7.Bake in the preheated oven for 20-25 minutes, until the vegetables are tender and the dish is bubbling.
- 8.Remove from the oven, squeeze fresh lemon juice over the top, and garnish with chopped parsley before serving.
