Ingredients
- 500g diced lamb shoulder
- 200g brown or green lentils, rinsed
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 large carrots, peeled and diced
- 2 medium parsnips, peeled and diced
- 400g can of chopped tomatoes
- 800ml vegetable broth
- 30ml olive oil
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 cinnamon stick
- Juice of 1/2 lemon
- Small bunch of fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- 1.Heat the olive oil in a large pot or Dutch oven over medium-high heat. Season the lamb with salt and pepper, then brown it in batches. Remove the lamb and set it aside.
- 2.Reduce the heat to medium. Add the chopped onion and sauté for 5-7 minutes until softened and translucent. Add the minced garlic, cumin, coriander, and turmeric, and cook for one more minute until fragrant.
- 3.Add the diced carrots and parsnips to the pot, stirring to coat them in the spices. Cook for 3-4 minutes.
- 4.Return the browned lamb to the pot. Stir in the rinsed lentils, chopped tomatoes, vegetable broth, and the cinnamon stick. Bring the mixture to a simmer.
- 5.Once simmering, reduce the heat to low, cover the pot, and let it cook for 45-50 minutes, or until the lamb is tender and the lentils are fully cooked. Stir occasionally.
- 6.Remove the cinnamon stick. Stir in the fresh parsley and lemon juice. Adjust seasoning with salt and pepper to taste before serving.
