Spiced Millet with Roasted Fennel and Orange

Ingredients
- 120g millet
- 1 large fennel bulb (approx. 300g)
- 1 orange
- 40g walnuts
- 1 small red onion
- 2 cloves garlic
- 30ml olive oil
- 300ml vegetable broth or water
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp smoked paprika
- Salt and freshly ground black pepper to taste
Instructions
- 1.Preheat your oven to 200°C. Trim the fennel bulb, cut it into wedges, and place on a baking sheet. Drizzle with half the olive oil, season with salt and pepper, and roast for 20-25 minutes until tender and caramelized.
- 2.While the fennel roasts, toast the walnuts in a dry pan over medium heat for 3-5 minutes until fragrant. Roughly chop them and set aside.
- 3.Finely chop the red onion and mince the garlic. Heat the remaining olive oil in a medium pot over medium heat. Sauté the onion for 5 minutes until soft, then add the garlic, cumin, coriander, and smoked paprika. Cook for 1 more minute until aromatic.
- 4.Add the millet to the pot and stir for a minute to toast the grains. Pour in the vegetable broth, bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until all the liquid is absorbed.
- 5.Zest the orange directly into the cooked millet. Squeeze the juice from half the orange into the pot.
- 6.Fluff the cooked millet with a fork. Gently stir in the roasted fennel and most of the toasted walnuts. Season to taste with additional salt and pepper, and serve warm, garnished with the remaining walnuts.
