Ingredients
- 2 large bell peppers (any color)
- 200g lean ground lamb
- 100g dry quinoa
- 1 small zucchini, finely diced
- 100g cherry tomatoes, quartered
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh mint, chopped
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- Salt and black pepper to taste
- 200ml water or vegetable broth
Instructions
- 1.Preheat your oven to 200°C (400°F). Cook the quinoa according to package directions using 200ml of water or broth.
- 2.While the quinoa cooks, slice the bell peppers in half lengthwise and remove the seeds and membranes. Place them cut-side up in a baking dish.
- 3.Heat the olive oil in a skillet over medium-high heat. Add the chopped onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- 4.Add the ground lamb to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat.
- 5.Stir in the diced zucchini, quartered cherry tomatoes, cumin, and coriander. Cook for 3-4 minutes until the zucchini is slightly tender. Season with salt and pepper.
- 6.Remove the skillet from the heat. Stir in the cooked quinoa, chopped parsley, mint, and lemon juice. Mix everything together well.
- 7.Spoon the lamb and quinoa mixture evenly into the bell pepper halves.
- 8.Pour a small amount of water (about 60ml) into the bottom of the baking dish to create steam. Cover with foil and bake for 20 minutes. Remove the foil and bake for another 10-15 minutes, until the peppers are tender.
- 9.Let cool slightly before serving. Garnish with extra fresh herbs if desired.
