Ingredients
- 500g diced lamb leg
- 200g quinoa
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 large carrots, chopped
- 80g dried apricots, halved
- 400g can chickpeas, rinsed and drained
- 500ml vegetable broth
- 30ml olive oil
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground ginger
- 1/2 tsp turmeric
- 1 cinnamon stick
- Juice of 1/2 lemon
- 1 small bunch fresh cilantro, chopped
- Salt and black pepper to taste
Instructions
- 1.Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the chopped onion and cook for 5 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- 2.Add the diced lamb to the pot, season with salt and pepper, and brown on all sides.
- 3.Stir in the cumin, coriander, ginger, and turmeric. Cook for 1 minute until the spices are aromatic.
- 4.Pour in the vegetable broth, add the cinnamon stick, chopped carrots, and dried apricots. Bring to a boil, then reduce the heat to low, cover, and simmer for 40 minutes, or until the lamb is tender.
- 5.While the tagine simmers, cook the quinoa. Rinse 200g of quinoa, add it to a pot with 400ml of water, bring to a boil, then cover and simmer for 15 minutes until the water is absorbed.
- 6.Stir the rinsed chickpeas into the tagine and cook for 5 more minutes to heat through.
- 7.Remove the pot from the heat. Discard the cinnamon stick and stir in the lemon juice and fresh chopped cilantro.
- 8.Serve the lamb tagine hot over the fluffy cooked quinoa.
