Ingredients
- 300g ground lamb
- 1 large sweet potato (about 400g), peeled and diced
- 1 red bell pepper, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 100g fresh spinach
- 2 large eggs
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- Salt and freshly ground black pepper to taste
Instructions
- 1.Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced sweet potato and cook for 8-10 minutes, stirring occasionally, until it starts to soften and brown.
- 2.Add the chopped onion and bell pepper to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
- 3.Push the vegetables to one side of the pan. Add the ground lamb to the empty side, breaking it up with a spoon. Cook until browned, then stir in the minced garlic, smoked paprika, and cumin. Mix everything together.
- 4.Reduce the heat to low, stir in the fresh spinach, and cook until it wilts, about 1-2 minutes. Season generously with salt and pepper.
- 5.While the hash is finishing, poach or fry the two eggs in a separate small pan to your desired doneness.
- 6.Divide the hash between two bowls and top each with a poached or fried egg before serving.
