Ingredients
- 500g ground lamb
- 2 medium sweet potatoes (about 500g), cubed
- 3 large carrots (about 300g), chopped
- 1 large parsnip (about 200g), chopped
- 1 red onion, cut into wedges
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon ground cinnamon
- 3 tablespoons olive oil, divided
- Salt and freshly ground black pepper to taste
- 3 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh mint
- Juice of 1 lemon
- 2 tablespoons extra virgin olive oil
Instructions
- 1.Preheat your oven to 200°C. On a large baking sheet, toss the sweet potatoes, carrots, parsnip, and red onion with 2 tablespoons of olive oil, salt, and pepper. Roast for 15 minutes.
- 2.While the vegetables are roasting, prepare the meatballs. In a medium bowl, combine the ground lamb, minced garlic, cumin, coriander, paprika, cinnamon, salt, and pepper. Mix gently until just combined.
- 3.Roll the lamb mixture into 16-20 small meatballs. After the vegetables have roasted for 15 minutes, add the meatballs to the baking sheet, nestling them among the vegetables.
- 4.Return the sheet to the oven and roast for another 15-20 minutes, or until the vegetables are tender and the meatballs are cooked through and browned.
- 5.While everything is roasting, prepare the drizzle. In a small bowl, whisk together the fresh parsley, mint, lemon juice, and 2 tablespoons of extra virgin olive oil. Season with a pinch of salt.
- 6.Serve the roasted vegetables and meatballs immediately, generously drizzling the lemon-herb sauce over the top.
