- 300g lamb mince
- 100g quinoa
- 150g cucumber
- 150g cherry tomatoes
- 1/2 small red onion
- 2 cloves garlic
- 15g fresh mint
- 15g fresh parsley
- 1 lemon
- 30ml olive oil

Instructions
- 1.Cook the 100g of quinoa according to package directions. Once cooked, fluff with a fork and set aside to cool.
- 2.Finely chop the fresh mint, parsley, and garlic. In a bowl, combine the 300g lamb mince with half of the chopped herbs, one minced garlic clove, salt, and pepper. Mix well and form into 4-6 small patties.

- 4.While the patties cook, prepare the salad. Dice the 150g of cucumber, halve the 150g of cherry tomatoes, and thinly slice the 1/2 red onion.
- 5.In a large bowl, combine the cooled quinoa, diced cucumber, cherry tomatoes, sliced red onion, and the remaining fresh herbs.
- 6.To make the dressing, whisk together the juice of 1 lemon, the remaining 15ml of olive oil, the remaining minced garlic clove, salt, and pepper. Pour over the quinoa salad and toss gently to combine.
