Ingredients
- 300g lean lamb mince
- 150g quinoa
- 1 medium cucumber
- 1 small red onion
- 2 cloves garlic
- 15g fresh mint, chopped
- 15g fresh parsley, chopped
- 1 lemon
- 30ml olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 0.5 tsp ground cinnamon
- Salt and black pepper to taste
Instructions
- 1.Rinse 150g of quinoa under cold water. Add it to a saucepan with 300ml of water, bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until all water is absorbed.
- 2.In a bowl, combine the lamb mince, one finely minced garlic clove, half of the finely chopped red onion, cumin, coriander, paprika, cinnamon, salt, and pepper. Mix well and form into 6-8 small oval koftas.
- 3.Heat 15ml of olive oil in a large skillet over medium-high heat. Cook the koftas for 8-10 minutes, turning occasionally until browned on all sides and cooked through.
- 4.Fluff the cooked quinoa with a fork and stir in the chopped parsley, half of the chopped mint, and a squeeze of lemon juice.
- 5.For the salad, dice the cucumber and the remaining red onion. Combine in a bowl with the remaining mint. Drizzle with 15ml of olive oil and a generous squeeze of lemon juice. Season with salt and pepper.
- 6.Arrange the herbed quinoa on two plates, top with the lamb koftas, and serve with the refreshing cucumber-mint salad on the side.
