Mediterranean Lamb Patties with Herbed Quinoa Salad

Ingredients
- 300g lean lamb mince
- 100g quinoa
- 200ml water
- 1/2 cucumber, diced
- 150g cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1 clove garlic, minced
- 1 small bunch fresh mint, chopped
- 1 small bunch fresh parsley, chopped
- 1 lemon, juiced
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- Salt and black pepper to taste
Instructions
- 1.Rinse 100g of quinoa. In a small pot, combine the quinoa with 200ml of water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until the liquid is absorbed. Fluff with a fork and set aside to cool slightly.
- 2.In a bowl, mix 300g lamb mince, minced garlic, 1 tsp cumin, 1/2 tsp coriander, half of the chopped parsley, salt, and pepper. Form the mixture into 4-6 small patties.
- 3.Heat 1 tbsp of olive oil in a non-stick pan over medium-high heat. Cook the patties for 3-4 minutes on each side, until browned and cooked through.
- 4.While the patties cook, assemble the salad. In a large bowl, combine the cooked quinoa, diced cucumber, halved cherry tomatoes, finely chopped red onion, and the remaining fresh mint and parsley.
- 5.In a small bowl, whisk together the juice of 1 lemon and 1 tbsp of olive oil to create a dressing. Pour over the quinoa salad and toss to combine. Season with salt and pepper.
- 6.Divide the herbed quinoa salad between two plates and top with the warm lamb patties. Serve immediately.
