- 800ml low-sodium vegetable broth
- 150g fresh spinach
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- 1.Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook for 5-7 minutes until softened and translucent.
- 2.Add the minced garlic, cumin, coriander, and turmeric. Stir constantly for 1 minute until fragrant.
- 3.Add the cubed sweet potato, rinsed red lentils, and vegetable broth to the pot. Season with a pinch of salt and pepper.
- 4.Bring the stew to a boil, then reduce the heat to low, cover, and let it simmer for 20-25 minutes, or until the lentils and sweet potatoes are tender.
- 5.Stir in the fresh spinach and cook for another 2-3 minutes until it has wilted completely into the stew.
