Ingredients
- 400g ground lamb
- 30g unsweetened dried apricots, finely chopped
- 1 small onion, finely grated
- 2 cloves garlic, minced
- 400g cauliflower (about 1/2 head)
- 1 large tomato, finely diced
- 100g cucumber, finely diced
- 45g fresh parsley, chopped (divided)
- 15g fresh mint, chopped
- 45ml extra virgin olive oil (plus more for cooking)
- 30ml lemon juice (from 1 lemon)
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/4 teaspoon cinnamon
- Salt and black pepper to taste
Instructions
- 1.In a large bowl, combine the ground lamb, chopped apricots, grated onion, minced garlic, 15g of the chopped parsley, cumin, coriander, cinnamon, salt, and pepper. Mix thoroughly until well combined.
- 2.Divide the lamb mixture into 6-8 equal portions and shape them into small oval koftas.
- 3.Heat a tablespoon of olive oil in a skillet over medium-high heat. Cook the koftas for 8-10 minutes, turning occasionally, until browned on all sides and cooked through.
- 4.While the koftas cook, prepare the tabbouleh. Grate the cauliflower florets or pulse them in a food processor until they have a rice-like consistency. Transfer to a serving bowl.
- 5.Add the diced tomato, cucumber, the remaining 30g of parsley, and the chopped mint to the cauliflower rice.
- 6.In a small bowl, whisk together 45ml of extra virgin olive oil, the lemon juice, salt, and pepper to create the dressing. Pour over the tabbouleh and toss well to combine.
- 7.Serve the warm lamb koftas immediately alongside the fresh cauliflower tabbouleh.
