Ingredients
- 300g lean lamb loin chops (about 2 chops)
- 100g millet
- 300g carrots, peeled and sliced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 15ml olive oil
- 1 lemon (for juice and zest)
- 30g pomegranate seeds
- 15g fresh parsley, chopped
- 10g fresh mint, chopped
- 5g ground cumin
- 5g ground coriander
- 2g ground ginger
- Pinch of cinnamon
- Salt and freshly ground black pepper to taste
Instructions
- 1.Preheat your oven to 200°C. On a baking tray, toss the sliced carrots with half of the olive oil, salt, and pepper. Roast for 20-25 minutes, until tender and lightly caramelized.
- 2.While the carrots roast, cook the millet. Rinse the millet well, then add it to a pot with 400ml of water and a pinch of salt. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until the water is absorbed.
- 3.In a small bowl, mix the cumin, coriander, ginger, and cinnamon. Pat the lamb chops dry and season them generously on both sides with the spice mix, salt, and pepper.
- 4.Heat the remaining olive oil in a pan over medium-high heat. Sear the lamb chops for 3-4 minutes per side for medium-rare, or to your desired doneness. Let them rest for 5 minutes.
- 5.Fluff the cooked millet with a fork. Stir in the chopped onion, garlic, parsley, mint, pomegranate seeds, lemon zest, and a squeeze of lemon juice.
- 6.Divide the jeweled millet between two plates. Arrange the roasted carrots alongside and top with a succulent lamb chop to serve.
