Ingredients
- 500g lean ground turkey
- 2 medium sweet potatoes (approx. 500g), diced
- 1 can (400g) black beans, rinsed and drained
- 1 can (400g) chopped tomatoes
- 150g fresh baby spinach
- 1 large onion, chopped
- 3 cloves garlic, minced
- 30ml olive oil
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- Salt and black pepper to taste
- Fresh cilantro and lime wedges for serving (optional)
Instructions
- 1.Heat olive oil in a large skillet or pan over medium-high heat. Add the chopped onion and cook for 3-4 minutes until softened.
- 2.Add the minced garlic, cumin, paprika, and chili powder. Cook for another minute until fragrant.
- 3.Add the ground turkey to the skillet. Break it up with a spoon and cook for 5-7 minutes until browned all over.
- 4.Stir in the diced sweet potatoes, chopped tomatoes (with their juice), and 120ml of water. Season generously with salt and pepper.
- 5.Bring the mixture to a simmer, then reduce the heat, cover, and cook for 15-20 minutes until the sweet potatoes are tender when pierced with a fork.
- 6.Stir in the rinsed black beans and fresh spinach. Allow to cook for 2-3 minutes, just until the spinach has wilted into the mixture.
- 7.Taste and adjust seasoning if needed. Serve hot, garnished with fresh cilantro and a squeeze of lime juice if desired.
