Ingredients
- 300g cod fillets, skinless
- 150g cooked chickpeas, drained and rinsed
- 220g artichoke hearts in water, drained and quartered
- 250g cherry tomatoes, halved
- 30g Kalamata olives, pitted
- 2 cloves garlic, minced
- 1 lemon, half juiced, half sliced
- 20ml extra virgin olive oil
- 1 tsp dried oregano
- Small bunch of fresh parsley, chopped
- Salt and freshly ground black pepper to taste
Instructions
- 1.Preheat your oven to 200°C (180°C fan).
- 2.In a medium baking dish, combine the cherry tomatoes, chickpeas, artichoke hearts, olives, minced garlic, olive oil, dried oregano, salt, and pepper. Toss well to combine.
- 3.Nestle the cod fillets into the vegetable mixture. Squeeze the juice of half a lemon over the fillets and vegetables. Arrange the lemon slices on top.
- 4.Bake for 15-20 minutes, or until the cod is opaque and flakes easily with a fork.
- 5.Garnish generously with fresh chopped parsley before serving.
