- 50 kg chicken breast
- 25 kg chilli paneer
- 2.5 kg salt
- 1.5 kg black pepper
- 2 kg mixed dried herbs (such as oregano, thyme, rosemary)
- 1 kg chili flakes
- 2 liters olive oil
- 10 liters water
Instructions
- 1.Cut the chicken breast into large chunks and the chilli paneer into cubes.
- 2.In large cooking vessels, heat olive oil over medium heat.
- 3.Add chicken breast pieces and sear lightly until golden on the outside.
- 4.Add chilli paneer cubes and stir gently.
- 5.Season with salt, black pepper, dried herbs, and chili flakes.
- 6.Add water to keep the mixture moist during long cooking.
- 7.Cover and slow cook the mixture on low heat for approximately 400 minutes (around 6.5 hours), stirring occasionally and adding water if necessary.
- 8.Once the chicken is tender and fully cooked, and the paneer has absorbed the flavors, remove from heat.
- 9.Serve hot in portions suitable for 100 people.
