Ingredients
- 250g ground lamb
- 100g millet, dry
- 250ml water or vegetable broth
- 1 medium zucchini, diced
- 1 red bell pepper, diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 15ml fresh lemon juice
- 10g fresh mint, chopped
- 10g fresh parsley, chopped
- 1 tsp ground cumin
- Salt and black pepper to taste
Instructions
- 1.In a small pot, bring the water or broth to a boil. Add the rinsed millet, reduce heat to low, cover, and simmer for 15-20 minutes until all liquid is absorbed. Fluff with a fork.
- 2.While the millet cooks, heat the olive oil in a large skillet over medium-high heat. Add the chopped onion and cook for 3-4 minutes until softened.
- 3.Add the minced garlic and ground lamb to the skillet. Cook for 5-7 minutes, breaking up the meat with a spoon, until it is browned. Drain any excess fat.
- 4.Stir in the diced zucchini, bell pepper, and ground cumin. Season with salt and pepper. Sauté for another 5-7 minutes until the vegetables are tender-crisp.
- 5.Add the cooked millet to the skillet with the lamb and vegetables, stirring to combine everything.
- 6.Remove the skillet from the heat. Stir in the chopped fresh mint, parsley, and lemon juice. Serve immediately.
