Herbed Lamb Koftas with Cauliflower Tabbouleh

Ingredients
- 500g ground lamb
- 1 red onion, finely chopped
- 3 cloves garlic, minced
- 45g fresh parsley, chopped, divided
- 30g fresh mint, chopped, divided
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 large head of cauliflower (approx. 800g), riced
- 2 cucumbers, finely diced
- 4 ripe tomatoes, diced
- Juice of 2 lemons
- 60ml extra virgin olive oil, divided
- Salt and black pepper to taste
Instructions
- 1.In a large bowl, combine the ground lamb, red onion, garlic, half the parsley, half the mint, cumin, coriander, salt, and pepper. Mix thoroughly with your hands until just combined.
- 2.Divide the mixture and form it into 12-16 small oval-shaped koftas. Set aside.
- 3.Heat 30ml of olive oil in a large skillet over medium-high heat. Carefully place the koftas in the pan and cook for 8-10 minutes, turning occasionally, until browned on all sides and cooked through.
- 4.While the koftas are cooking, prepare the tabbouleh. In a separate large bowl, combine the riced cauliflower, diced cucumbers, tomatoes, and the remaining parsley and mint.
- 5.To make the dressing, whisk together the lemon juice, the remaining 30ml of olive oil, and a pinch of salt and pepper.
- 6.Pour the dressing over the cauliflower mixture and toss well to combine. Let it sit for a few minutes for the flavors to meld.
- 7.Serve the warm lamb koftas immediately with the fresh cauliflower tabbouleh on the side.
