Ingredients
- 2 large zucchini (about 600g total)
- 250g lean ground turkey
- 100g cooked brown or green lentils
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 150g cherry tomatoes, quartered
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh mint, chopped
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt and freshly ground black pepper to taste
Instructions
- 1.Preheat oven to 200°C. Cut the zucchini in half lengthwise and scoop out the flesh, leaving a 1cm border to create 'boats'. Finely chop the scooped-out zucchini flesh.
- 2.Heat half of the olive oil in a pan over medium heat. Sauté the chopped onion and garlic until soft, about 3-4 minutes.
- 3.Add the ground turkey to the pan, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
- 4.Stir in the chopped zucchini flesh, cooked lentils, and half of the chopped parsley. Season with salt and pepper. Cook for another 3-4 minutes.
- 5.Arrange the zucchini boats in a baking dish. Spoon the turkey and lentil mixture evenly into the boats.
- 6.Bake for 20-25 minutes, or until the zucchini is tender and the filling is heated through.
- 7.While the zucchini bakes, combine the quartered cherry tomatoes, remaining parsley, chopped mint, lemon juice, and remaining olive oil in a small bowl. Season with a pinch of salt and pepper.
- 8.Remove the zucchini boats from the oven and top with the fresh tomato and herb salsa before serving.
