Ingredients
- 250g lean diced lamb (from leg or shoulder)
- 100g dry Puy lentils, rinsed
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 large carrot, diced
- 1 celery stalk, diced
- 400g canned chopped tomatoes
- 500ml low-sodium vegetable or lamb stock
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 15g fresh parsley, chopped
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- 1.Heat the olive oil in a large pot or Dutch oven over medium-high heat. Pat the diced lamb dry, season with salt and pepper, and brown in batches until well-colored. Remove the lamb and set aside.
- 2.Reduce the heat to medium, add the chopped onion, carrot, and celery to the same pot. Sauté for 6-8 minutes, stirring occasionally, until the vegetables have softened.
- 3.Add the minced garlic, dried oregano, and ground cumin. Cook for one more minute until fragrant.
- 4.Return the browned lamb to the pot. Add the rinsed Puy lentils, canned tomatoes, and low-sodium stock. Stir to combine, ensuring nothing is stuck to the bottom.
- 5.Bring the stew to a boil, then reduce the heat to low, cover the pot, and let it simmer gently for 35-40 minutes, or until the lentils are tender and the lamb is cooked through and soft.
- 6.Remove from the heat. Stir in the chopped fresh parsley and the lemon juice. Taste and adjust the seasoning with more salt and pepper if needed. Let it rest for 5 minutes before serving.
