Ingredients
- 250g lean ground turkey
- 100g brown or green lentils, dry
- 400g canned chopped tomatoes
- 400ml low-sodium vegetable broth
- 100g fresh spinach
- 1 small onion
- 2 cloves garlic
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 small handful fresh parsley, chopped
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- 1.Finely chop the onion and garlic. In a bowl, mix the ground turkey with half the chopped garlic, half the oregano, salt, and pepper. Form into 10-12 small meatballs.
- 2.Heat the olive oil in a large pot over medium-high heat. Brown the meatballs on all sides for about 5-7 minutes, then remove them from the pot and set aside.
- 3.In the same pot, add the onion and remaining garlic. Sauté for 3-4 minutes until softened and fragrant.
- 4.Add the dry lentils, chopped tomatoes, vegetable broth, and remaining oregano. Stir well, bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes until the lentils are tender.
- 5.Gently return the browned meatballs to the pot. Stir in the fresh spinach and continue to simmer for another 5-7 minutes, until the spinach has wilted and the meatballs are cooked through.
- 6.Remove the pot from the heat. Stir in the fresh chopped parsley and a squeeze of lemon juice. Season with additional salt and pepper if needed before serving.
