Ingredients
- 100g red lentils, rinsed
- 1 medium sweet potato (approx. 250g), peeled and cubed
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 30g chickpea flour
- 30ml olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric powder
- 150g plain yogurt
- 10g fresh mint or parsley, finely chopped
- Juice of 1/2 lemon
- Salt and freshly ground black pepper to taste
Instructions
- 1.Place the cubed sweet potato and rinsed lentils in a saucepan. Cover with water, bring to a boil, then reduce heat and simmer for 15-20 minutes until both are very tender. Drain thoroughly.
- 2.While the lentils and potato cook, heat 15ml of olive oil in a small pan over medium heat. Sauté the chopped onion until soft, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
- 3.In a large bowl, mash the cooked sweet potato and lentils together. Add the sautéed onion and garlic, chickpea flour, cumin, coriander, turmeric, salt, and pepper. Mix until well combined.
- 4.Form the mixture into 6-8 small patties. If the mixture feels too soft, you can chill it in the refrigerator for 15-20 minutes to firm up.
- 5.To make the dip, combine the plain yogurt, chopped fresh herbs, lemon juice, and a pinch of salt and pepper in a small bowl. Mix well and set aside.
- 6.Heat the remaining 15ml of olive oil in a large non-stick skillet over medium-high heat. Carefully place the patties in the pan and cook for 4-5 minutes per side, until golden brown and crisp.
- 7.Serve the warm patties immediately with the herbed yogurt dip and a fresh green salad.
