Ingredients
- 250g lean ground lamb
- 200g cooked green lentils (canned, rinsed)
- 1 medium yellow onion, finely chopped
- 2 cloves garlic, minced
- 100g fresh spinach
- 400g can of chopped tomatoes
- 15ml olive oil
- 5g ground cumin
- 5g ground coriander
- 2g turmeric powder
- 100g plain low-fat Greek yogurt
- 10g fresh mint, chopped
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- 1.Heat olive oil in a large skillet over medium-high heat. Add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- 2.Add the ground lamb to the skillet. Break it up with a spoon and cook for 5-7 minutes until browned. Drain any excess fat if necessary.
- 3.Stir in the ground cumin, coriander, turmeric, salt, and pepper. Cook for 1 minute to toast the spices and coat the lamb.
- 4.Pour in the chopped tomatoes and the rinsed lentils. Bring to a simmer, then reduce the heat to low, cover, and cook for 10 minutes for the flavors to meld.
- 5.While the skillet simmers, prepare the mint yogurt by combining the Greek yogurt, chopped mint, and lemon juice in a small bowl. Season with a pinch of salt.
- 6.Uncover the skillet and stir in the fresh spinach. Cook for 1-2 minutes until it has completely wilted into the mixture.
- 7.Divide the spiced lamb and lentil skillet between two bowls and serve warm with a generous dollop of the fresh mint yogurt on top.
