Ingredients
- 400g lean lamb mince
- 1 tbsp olive oil
- 1 large onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 400g can chopped tomatoes
- 400g can brown lentils, rinsed and drained
- 500ml low-sodium vegetable broth
- Juice of 1/2 lemon
- Salt and freshly ground black pepper to taste
- Handful of fresh parsley, chopped
Instructions
- 1.Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chopped onion, carrots, and celery. Sauté for 5-7 minutes until softened.
- 2.Add the minced garlic, ground cumin, and coriander. Cook for another minute until fragrant.
- 3.Add the lean lamb mince to the pot. Break it up with a spoon and cook for 5-6 minutes until browned all over.
- 4.Drain any excess fat. Pour in the chopped tomatoes and vegetable broth. Bring to a simmer, then reduce the heat to low, cover, and cook for 15 minutes to allow the flavors to meld.
- 5.Stir in the rinsed lentils, season with salt and pepper, and cook for another 5 minutes until everything is heated through.
- 6.Remove from the heat. Stir in the lemon juice and garnish with fresh parsley before serving.
