Ingredients
- 4 large bell peppers (assorted colors)
- 450g lean ground lamb
- 150g uncooked quinoa
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 medium zucchini, finely diced
- 200g cherry tomatoes, quartered
- 30ml extra virgin olive oil
- Juice of 1 lemon
- 15g fresh mint, chopped
- 15g fresh parsley, chopped
- Freshly ground black pepper to taste
- A pinch of salt
Instructions
- 1.Preheat your oven to 200°C (400°F). Cook the quinoa according to package directions. While it cooks, cut the bell peppers in half lengthwise and remove the seeds and membranes.
- 2.Place the pepper halves on a baking sheet, drizzle lightly with olive oil, and bake for 15 minutes until slightly softened.
- 3.While the peppers bake, heat 15ml of olive oil in a large skillet over medium-high heat. Add the chopped onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for another minute.
- 4.Add the ground lamb to the skillet, breaking it up with a spoon. Cook until browned, then drain any excess fat.
- 5.Stir in the diced zucchini and quartered cherry tomatoes. Cook for 5-7 minutes until the vegetables are tender.
- 6.Remove the skillet from the heat. Stir in the cooked quinoa, chopped mint, parsley, lemon juice, and black pepper. Mix well to combine.
- 7.Carefully fill each baked pepper half with the lamb and quinoa mixture, mounding it on top.
- 8.Return the stuffed peppers to the oven and bake for an additional 10-15 minutes, or until heated through and the peppers are tender.
- 9.Serve immediately, garnished with a little extra fresh parsley if desired.
