Ingredients
- 300g ground turkey
- 400g sweet potato, diced
- 100g fresh spinach
- 1 red bell pepper, chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 15ml olive oil
- 1 teaspoon dried oregano
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- 1.Heat olive oil in a large skillet over medium-high heat. Add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- 2.Add the ground turkey to the skillet. Break it up with a spoon and cook for 5-7 minutes until browned. Drain any excess fat if needed.
- 3.Stir in the diced sweet potato, chopped red bell pepper, and dried oregano. Season with salt and pepper. Add 60ml of water, cover the skillet, and reduce the heat to medium. Simmer for 10-12 minutes, or until the sweet potato is tender.
- 4.Once the sweet potato is cooked, stir in the fresh spinach and cook until it wilts, about 1-2 minutes.
- 5.Remove from heat and squeeze fresh lemon juice over the top. Stir to combine, taste, and adjust seasoning if needed before serving.
