Ingredients
- 30ml olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 600g sweet potatoes, peeled and diced
- 200g brown or green lentils, rinsed
- 1 liter vegetable broth
- 1 tablespoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 200g kale, tough stems removed and leaves chopped
- Juice of 1/2 lemon
- Salt and freshly ground black pepper to taste
Instructions
- 1.Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook for 5-7 minutes until softened and translucent.
- 2.Add the minced garlic, ground cumin, ground coriander, and smoked paprika. Stir continuously for 1 minute until fragrant.
- 3.Add the diced sweet potatoes, rinsed lentils, and vegetable broth to the pot. Season generously with salt and pepper.
- 4.Bring the mixture to a boil, then reduce the heat to a low simmer. Cover the pot and cook for 25-30 minutes, or until the lentils and sweet potatoes are tender.
- 5.Stir in the chopped kale and continue to cook for another 3-5 minutes, just until the leaves have wilted into the stew.
- 6.Remove the pot from the heat. Squeeze in the fresh lemon juice, stir, and taste. Adjust seasoning with more salt or pepper if needed before serving.
