Ingredients
- 250g lean ground lamb
- 100g coarse bulgur wheat
- 1 large zucchini (approx. 200g), diced
- 1 red bell pepper, diced
- 150g cherry tomatoes, halved
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 250ml vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and freshly ground black pepper to taste
- Handful of fresh mint or parsley, chopped
- Juice of 1/2 lemon
Instructions
- 1.Heat the olive oil in a large skillet or pan over medium-high heat. Add the chopped onion and cook for 3-4 minutes until softened.
- 2.Add the minced garlic and cook for another minute until fragrant. Add the ground lamb, breaking it up with a spoon, and cook until browned, about 5-6 minutes.
- 3.Stir in the ground cumin and coriander, and season with salt and pepper.
- 4.Add the diced zucchini and bell pepper. Sauté for 4-5 minutes until they begin to soften.
- 5.Stir in the bulgur wheat, halved cherry tomatoes, and vegetable broth. Bring the mixture to a simmer.
- 6.Reduce the heat to low, cover the skillet, and cook for 10-12 minutes, or until the bulgur is tender and has absorbed the liquid.
- 7.Remove from the heat. Fluff with a fork and stir in the chopped fresh herbs and a squeeze of lemon juice. Serve immediately.
