Roasted Root Vegetable & Lentil Pilaf

Ingredients
- 150g brown or green lentils, rinsed
- 1 medium sweet potato (approx. 250g), peeled and cubed
- 2 medium carrots (approx. 150g), peeled and chopped
- 1 parsnip (approx. 100g), peeled and chopped
- 1 red onion, finely chopped
- 2 cloves garlic, minced
- 500ml vegetable broth
- 2 tablespoons olive oil, divided
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- Salt and black pepper to taste
- 20g fresh parsley, finely chopped
- 10g fresh mint, finely chopped
- Juice of 1 lemon
Instructions
- 1.Preheat your oven to 200°C. On a baking sheet, toss the cubed sweet potato, carrots, and parsnip with 1 tablespoon of olive oil, cumin, coriander, turmeric, salt, and pepper. Roast for 25-30 minutes until tender and lightly caramelized.
- 2.While the vegetables roast, heat 1/2 tablespoon of olive oil in a pot over medium heat. Sauté the chopped red onion for 5 minutes until soft, then add the minced garlic and cook for 1 minute more.
- 3.Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes, until the lentils are tender and the liquid is absorbed.
- 4.In a small bowl, whisk together the chopped parsley, mint, lemon juice, and the remaining 1/2 tablespoon of olive oil. Season with a pinch of salt.
- 5.Gently fold the roasted vegetables into the cooked lentils. Adjust seasoning with salt and pepper to your preference.
- 6.Serve the pilaf warm, topped with the fresh lemon-herb dressing.
